Etymology From Middle English *halibutt, equivalent to holy + but (“flatfish”), since the fish was often eaten on holy days. Cognate with Dutch heilbot, German Heiligbutt, Heilbutt, Heilbutte, Danish helleflynder, Swedish helgeflundra, and Norwegian Nynorsk hellefisk.
